Bikini Recipe

Yields 10 servings

For the Citrus Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

Ingredients for the Drink (makes 850ml, serving 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, for finishing

Method

For the Syrup: Place all the components into a saucepan, bring to a light boil, agitating so the sugar melts. Next, take off the burner and leave to cool down completely. Pour into a sterilised bottle, cap it and refrigerate it in the fridge, it can be stored for about four weeks.

For the Batch Mix: Mix the specified liquid ingredients in a sizeable container, let it rest for an hour, then strain preferably using cheesecloth, making it fully clarified.

When ready to serve: Measure 85ml from the batch mix into a stirring glass containing ice, and stir carefully for a minute until cold. Pour to a cold coupe glass or similar, garnish with a few cranberries and complete it using a quick spritz with the mandarin essence over the drink.
